Bakery Style Jumbo Banana Muffins
The perfect, fluffy banana muffin recipe. Enjoying these muffins warm smothered in butter, there’s nothing better.
Ingredients
Makes 6 jumbo muffins
260 g mashed ripe bananas (about 2.5 bananas)
2 eggs
150 g granulated sugar
115 g light brown sugar
56 g melted butter
48 g vegetable oil
115 g milk
1 Tbsp vanilla
500 g all purpose flour
4 tsp baking powder
1 Tbso cornstarch
Optional add- ins : chocolate chips, walnuts, peanut butter chips
Directions
In a large mixing bowl, whisk together mashed bananas, eggs, sugars, butter, milk, oil and vanilla.
In a medium mixing bowl, whisk together flour, baking powder and cornstarch. Fold into wet ingredients and place in the fridge for 15 minutes.
Preheat oven to 425 f
Spray jumbo muffin pan with nonstick spray. Fill muffin tins to just below the top.
Lower oven temp to 350 and bake for 30-32 minutes.
