Banana Pudding Baked Donuts
A banana bread inspired donut topping with a banana pudding and Nilla wafers.
Ingredients
1/2 tsp lemon juice
2 tbsp milk
4 tbsp butter softened
100g granulated sugar
1 egg
126g flour
1/2 tsp baking soda
1 tsp baking powder
1 ripe banana, mashed
1/8 tsp salt
Banana Pudding Topping:
3 tbsp instant banana OR vanilla pudding mix
123g milk
3 tbsp sweetened condensed milk
1/2 c cool whip
1/2 tsp vanilla extract
add crushed Nilla wafers and cool whip on top of banana pudding.
Directions
Preheat oven to 375 f
in a very small bowl, mix together your lemon juice and milk and set aside.
In a large bowl, cream your butter and sugar until light and fluffy. Then add your egg and milk mixture.
In a small bowl, whisk together your flour, baking powder, baking soda, and salt.
Slowly add your dry ingredients to your wet ingredients, then stir in your mashed banana.
Pour into a donut mold up to 2/3rds full.
Bake for 18-20 min until a toothpick comes out clean and they are golden brown.
Let them cool for a few minutes before popping them out onto a cooling rack.
While the donuts cool, make your banana pudding topping. Whisk together the pudding mix, milk, sweetened condensed milk, and vanilla extract. Then gently fold in the cool whip.
Place your pudding mixture in the fridge for 5-10 minutes to set.
Once donuts are cooled, place a Nilla wafer over the donut hole to prevent the pudding from falling through (optional).
Using a spoon, apply a scoop of pudding on top of your donuts. Top with crushed Nilla wafers and more cool whip.
