Christmas Town Cookies
A red velvet chocolate chip cookie, stuffed with a chocolate chip cookie dough cake pop. Topped with cookie butter!
Ingredients
Makes 6 cookies

113 g salted room temp butter
100 g light brown sugar
50 g granulated sugar
1 egg
1 Tbsp amoretti toasted marshmallow flavoring (optional, use vanilla as a sub)
2 tsp red food coloring ( I love americolor!)
250 g all purpose flour
62 g red velvet cake mix (dry)
1 tsp baking powder
1/4 tsp baking soda
pinch of salt
approx 1 cup chocolate chips, measure with your heart
red sanding sugar
cookie butter
crushed biscoff cookies
Directions
First. follow the recipe for the cake pops.
Next, preheat oven to 400 f and line a large baking sheet with parchment paper
In the bowl of a stand mixer, cream together both sugars and butter
Add egg, flavoring and food coloring.
In a medium mixing bowl, whisk together flour, cake mix, baking powder, baking soda, and salt.
Add dry ingredients to wet ingredients mixing on low until almost combined. Add chocolate chips and finish mixing on low until combined.
Weigh out 6 4.3 oz balls of cookie dough. Stuff each ball of cookie dough with a 2oz cake pop. You can leave the cake pops undipped before stuffing.
Roll dough balls into a tall egg shape. Roll the bottoms in red sanding sugar
Bake for 9-10 min. Allow to cool fully on the baking sheet. Big cookies need about 2-4 hours to fully set
Once cooled, add a spoonful of warmed cookie butter on top and sprinkle with crushed biscoff cookies.
If I don't want to use cake mix, can I replace with flour and red velvet emulsion?
