Ingredients
4 Tbsp salted butter
6 cups (300g) mini marshmallows
1 tsp vanilla extract
4 cups (112g) Rice Krispie cereal
1/4 cup (50g) granulated sugar
1 Tbsp cinnamon
Dulce de Leche (use the canned version, it’s thicker)
Optional topping: mini chocolate chips
Directions
Line an 8x8 pan with parchment paper
In a medium/large saucepan, brown your butter until amber brown with a nutty aroma.
Add your marshmallows and mix with butter until melted. Stir in vanilla.
Whisk together granulated sugar and cinnamon.
Measure Rice Krispie cereal in a large bowl, and pour your cinnamon sugar mixture and marshmallows on top, mixing together.
Spread about half of your Rice Krispie mixture into your pan, then spread a layer of dulce de leche on top. Top with the rest of the Rice Krispie mixture and gently press flat. Add optional mini chocolate chips.
Let sit for 30-60 minutes before removing and slicing.
Note: this recipe makes “regular” thickness Rice Krispie treats. If you would like jumbo treats, double the recipe for the same sized pan.
