Shamrock Shake Donut
Imagine a shamrock shake and a donut and Oreos had a baby. That's what this is!
Ingredients
1 c (120g) flour
3/4 tsp baking powder
1/4 tsp salt
1/2 c (100g) granulated sugar
1 egg
1/4 c (61g) sour cream
1/2 c (112g) milk
1 tsp mint extract
3 tbsp mini chocolate chips
5-6 crushed mint oreos
green food coloring
Irish Cream Icing
3 tbsp room temp butter
1 c (120g) powdered sugar
1-2 tbsp Irish cream creamer (if you can't find this, use heavy whipping cream and add 1 tsp Irish cream emulsion)
crushed mint oreos and melted chocolate for topping
Notes:
I personally used the thin Oreos for these donuts but the regular size are fine.
You can make a shelf stable icing using shortening instead of butter and adding the Irish cream emulsion. Use a little water to thin out the icing instead of cream.
Directions
Preheat oven to 350 f
In a small bowl, whisk together flour, baking powder, salt and sugar.
In a medium bowl, combine egg, sour cream, milk and mint extract.
Add dry ingredients to wet and stir until just combined. Add 1 tsp of green coloring, you may need more depending on desired color. Then, fold in the mini chocolate chips and crushed Oreos.
Pour into a donut mold up to 2/3rds full.
Bake approx 15 min. To check if your donuts are done, you may insert a toothpick to see if it comes out clean. Or if you press the top of the donut, it should spring back into place. If it sinks in, they are not ready.
Let the donuts cool for a few minutes, then remove from the donut pan onto a wire rack by flipping them upside down.
While donuts cool, make the icing by mixing together with a hand mixer the butter, Irish cream and powdered sugar.
Once donuts are cooled, slice them in half like a bagel. Place a mint Oreo on the bottom half of your donut and pipe your icing around the Oreo. Put the top half on your donut, then decorate with more icing, crushed Oreos and a chocolate drizzle.
Donuts are good for up to 3-4 days in a refrigerated airtight container, keep in mind your Oreos may become soft from the icing.
Plain donuts can be frozen for 2-3 months
