Toffee & Chocolate Chunk Cookies
A thick bakery style cookie with toffee bits and chocolate chunks.
Ingredients
for the dough
198 g room temp unsalted butter
100 g granulated sugar
200 g dark brown sugar
2 eggs
2 tsp vanilla extract
420 g all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 Tbsp cornstarch
160 g toffee bits
140 g chocolate chunks
Directions
Preheat oven to 375 f and line two baking sheets with parchment paper.
In the bowl of a stand mixer, cream together your butter and sugars until light and fluffy. Add eggs and vanilla until combined.
In a medium bowl, whisk together all your dry ingredients (minus toffee bits and chocolate chunks).
Fold dry ingredients into wet ingredients. Fold in your mix ins.
Using a 1 Tbsp (medium) sized cookie scoop, scoop three scoops directly on top of each other to creat this rustic, ice cream looking cookie shape. Place a few extra chocolate chunks on top of each cookie.
Bake for 10-12 min. Allow to cool on the rack for 30 minutes then transfer to a cooling rack to finish cooling.
Cookies may need 4-6 hours to set before opening them.
